Food on Friday ~ Gluten Intolerance

Some say that wheat is safe for everyone except those who have celiac disease.  And, that non-celiac gluten sensitivity isn’t a real medical condition.  So why is wheat bad for you?  Especially genetically enhanced, chemical laden, pesticide sprayed, modern American wheat is really, really bad for you.  If you have the sense your mother gave you, then you should stop eating anything made from wheat.

Gluten is what turns a mixture of flower and water into glue.  Gluten is a family of proteins found in grains like; wheat, spelt, rye, barley, bulgur, oats, and seitan.  There is no gluten in either quinoa or rice.  Nor is there any gluten in potato or beans.  However gluten is found in almost all processed and packaged foods, sauces, and canned food.

Non celiac gluten sensitivity is poorly understood, and there are no specific medical tests of your blood, stool, or urine that can reliably diagnose gluten intolerance.  You and your doctors can only reliably diagnose gluten intolerance by the symptoms and health problems you have.  On the other hand, there are reliable diagnostic tests for full-blown celiac disease.

Common digestive and health problems caused by gluten intolerance include;

  • Irritable bowl problems such as abdominal pain, bloating, cramping, constipation, and diarrhoea.
  • Nausea and vomiting.
  • Irritation of the mouth and throat.
  • Brain fog, difficulty concentrating, problematic memory.
  • Frequent headaches.
  • Mood changes, anxiety, depression, irritability.
  • Low energy and chronic fatigue syndrome.
  • Muscle and joint pains.  Osteoporosis.
  • Peripheral neuropathy, numbness and tingling in the hands, arms, feet and legs.
  • Skin problems, dermatitis, eczema, rosacea, skin rashes.
  • Nutrient deficiencies, vitamin deficiencies, iron deficiency, anemia.
  • Asthmatic attacks.
  • Higher risk of learning problems including autism and ADHD.
  • Sexual problems and in women missed periods.
  • Gut autoimmunity, damage to the gut biome

Gluten intolerance will affect every single part of the body as the bacteria in your gut help to control everything from nutrient absorption, to hormone production, to metabolic function, to the way your brain works.

The problem is that gluten from wheat is found in just as many products as that other evil and unnatural food; high fructose corn syrup.  One should read the labels before buying any food, and certainly avoid these foods

  • bread, crackers, pizza, burritos, tortilla, cakes, cookies and the like
  • beer, lager, stouts, ales
  • barley malt
  • packaged, store bought chicken broth
  • malt vinegar ~ buy natural organic apple cider vinegar instead
  • most salad dressings including mayonnaise
  • veggie burgers unless they are certified gluten-free
  • soy sauce
  • packets of seasonings and spice mixes
  • noodles unless they are rice noodles
  • all pasta, (unless it’s marked gluten-free)
  • most condiments
  • non dairy creamer
  • miso
  • bullion cubes and stock cubes
  • canned soups
  • cheese spreads and other processed cheeses
  • sausages and hot dogs
  • ice cream, frozen yogurt, and milk unless it’s from grass-fed cows.
  • Sour cream, which may contain modified food starch.

If you are even mildly gluten intolerant you will need to be very careful when eating out.  The same goes for buying Chinese take-out which is likely to be stuffed with MSG, (Monosodium Glutamate).  When eating out avoid fried foods, thickened sauces, and obviously bread.  Try to drink gluten-free booze such as cider, wine, spirits and liqueurs, (there are gluten-free beers).  And, if you’re drinking spirits don’t have diet soda as your mixer ~ diet soda is also bad for you.

Some say that gluten intolerance might really be glyphosate poisoning.  And that pre-harvest spraying of wheat and sugar cane with Roundup makes for an easier harvest.  All I know is that I don’t want to eat food contaminated with weed-killer.

As it goes, wheat flour and refined sugars are just so very bad for you that your best choice is to avoid them all together.  The list of health problems caused by these two staple foods is both long and nasty.

For most of us, giving up bread and beer is a pretty easy and very beneficial thing to do.

Some say that if you want to be really fit and healthy, start by never again eating anything made with wheat flour.  And that you know it makes sense.   All I know is that I’ve felt healthier, fitter, and more alert since I realised that wheat is bad for you.

Home Made Organic Weedkiller

Some of us have average sized gardens / yards, and pets, and don’t actually like putting commercial pesticides / weedkillers / noxious chemicals around our homes.  And yet, for the majority of gardeners there is still that need to control pernicious weeds, and truth be told stuff like roundup is good at that.

So, how to control weeds without resorting to artificial weedkillers?

  1. Weeding.  Without a shadow of a doubt the very best way to control weeds is to dig them up, roots and all, and either burn them or put them in the appropriate trash bin.  I eradicated a destructive patch of Japanese Knotweed just by digging it out.  The snag is that is very hard work and very time consuming.
  2. Landscape Fabric.  If you have a large area over which to control weeds, then you can use a physical barrier, sometimes called a landscape fabric.  First you either have to cut the weeds down as low as you can, or turn over the ground, preferably both ~ then you lay the landscape fabric barrier over the top or the cleared area.  You can buy this stuff on a roll, or if you’re moving into a new home you can use the old carpets you’re having taken out, (but NOT if they are rubber-backed).  Snag is whatever you use as a barrier it’s going to look naff, so you will need to cover it with a much such as chipped bark.
  3. Burning.  With a few exceptions plants do not like fire.  So, you could buy a garden flame-gun and burn the things to death.  DO NOT do this if you are an amateur, you could end up burning down your home if you start a fire in dry vegetation.
  4. Home Made Organic Weedkiller.  There are some ordinary household chemicals that will very effectively kill weeds and keep them suppressed over a long time.  We are not talking noxious things like bleach, just ordinary stuff.  My recipe for organic weedkiller is;
        1. a pound of salt
        2. a bottle of washing up liquid
        3. two pints of white vinegar
        4. a gallon of water

Mix the stuff together, put the vinegar in first, then the salt, (you’ll need hot water to dissolve the salt), and lastly add the washing up liquid, (don’t let it froth up).  You need to have all the salt dissolved.  Just use a watering can, and you don’t need to drown the weeds.  You might need a few applications over a week, especially if it rains.

The best thing is that none of the above will hurt your pets, except careless use of a flame gun.  (Scrap the flame gun idea.)

Some say the only proper way to control weeds is to dig them up.  And that there is nothing wrong with roundup.  All I know is that salt and vinegar will kill weeds.

Eating Bread is Killing You

The truth doesn’t change just because you don’t want to hear it.

Wheat is routinely sprayed with a chemical that will give you cancer.

Glyphosate is legally classified as a carcinogen, and glyphosate is the main active ingredient of a weedkiller called Roundup.  A federal jury in California found that Monsanto’s Roundup herbicide was a substantial factor in causing Edwin Hardeman’s non-Hodgkin’s lymphoma.

Monsanto, which is owned by the German chemicals company Bayer, is facing more than 9,000 similar lawsuits.  We all know that German chemicals companies have a very dark history.  In recent times the evil corporation Monsanto / Bayer has bullied scientists, suppressed evidence, and hid the cancer risks arising from Roundup / Glyphosate.

Even the US Environmental Protection Agency is not immune to collusion with Monsanto ~ the EPA lied when they stated that glyphosate is probably not carcinogenic to humans.  Monsanto knowingly lies when they say that Glyphosate has excellent environmental features….. and extremely low toxicity to mammals, birds, and fish.  Roundup was introduced in 1974, is used in 130 countries, to control weeds and improve the yield of more than 100 crops.  Every damn year in the USA, over 300 million pounds, (150,000 tons), of Roundup are sprayed on the crops you eat, especially wheat corn, soya, and canola, (from which we get the shit called canola oil).

That means that a hell of a lot of the everyday products you eat and drink are contaminated with a deadly, carcinogenic poisonous chemical.  Eating bread, cakes, cookies, anything with flour in it, anything with high fructose corn syrup in it, drinking beer with grains in it, using canola oil, are all seriously damaging your health.  Eat bread, drink beer, and be ill before you die sooner than you should.

There are more damn good reason that you shouldn’t eat bread; gluten sensitivity, wheat allergy, diabetes, Alzheimer’s disease, diabetes, and heart disease.  Bread is not the staff of life, bread is a killer food.

High fructose corn syrup will also kill you though; heart disease, obesity, cancer, dementia, liver failure, fatty liver, bad teeth…..  And, the average American consumes more than 60 pounds of this shit every damn year.  High Fructose Corn Syrup, and Cane Sugar are not the same thing, and the body handles them differently ~ cane sugar is safer, but more expensive.

Some pray, and give us our daily bread.  And some say that Roundup is completely safe to fish, birds, animals, and humans.  All I know is that I won’t eat shit.

One of the main purposes of genetically modifying food plants such as wheat and corn is to make them resistant to a weed-killer called Roundup, which is sprayed on food crops several times in a season ~ including right before harvesting to dry the crop out.  The principal active ingredient of Roundup is a chemical called Glyphosate.  Of many lies told about glyphosate is that it was discovered by Monsanto in 1970.  In fact this nasty chemical was first patented as a descaling and chelating agent for boilers and pipes by the Stauffer Chemical Co. in 1961.  It’s a drain cleaner.

Glyphosate is a poisonous organophosphorus carcinogen.

When I was a boy, learning about farming, I was told about field rotation, (or crop rotation), which is the practice of changing what the farmer grows on any piece of land on a four-year cycle.  This prevents such nasty things as soil erosion, soil exhaustion, soil poisoning, and poor soil fertility ~ all of which lead to poor crop yields.

Modern agribusiness doesn’t practice crop rotation, instead it uses monoculture farming.  This destructive method of land use requires large amounts of artificial fertilisers and pesticides to make it work, and it leads to an unbalanced and unsustainable ecosystem.  Agribusiness in the USA does not work in harmony with the land, instead it beats the land into submission to produce larger and larger amounts of poisonous food and drink.

These are very similar farming practices to those which caused the Great Plains dust bowl of the 1930’s, except modern farming practices are far more intensive and artificial than anything dreamed of by the farmers who helped cause the Great Depression.  Today, agriculture is based on very capital-intensive heavy machinery.

If a farmer in a typical high plains farming community decides to eschew intensive chemical-based monoculture and embrace more ecologically sustainable organic agriculture, he / she is likely to be ostracised by the rest of his / her community.  Peer pressure is a powerful thing and very difficult to ignore.  Most farmers are in denial about the damage they are doing to the soil, the rivers, the sea, and the wider environment.  Not to mention the poisons they are putting into your food and drink.

These chemical fertilisers and pesticides can take decades to completely clear from the environment.  The half-life of glyphosate in soil and water is much longer than Monsanto would like to admit.  Monsanto is a German company.

Some say they would never shop at a farmers market or buy organic produce.  And some people don’t believe that intensive farming practices are killing them.  All I know is that in 1945 about 45% of American food was grown in people’s back yards.

And, by the way, probiotic drinks are very bad for your health. The live bacteria in probiotic drinks originated in cows.

You may want to look for non-gluten alternative foods and products, and there are lots of these if you make the effort.  Personally I have merely given up anything made with wheat flour, including; bread, cakes, pizza, pasta, cookies, canned soups… ~ and I now also make an effort to read the labels on the stuff I buy at the supermarket.

For most of us, giving up bread and beer is a pretty easy and very beneficial thing to do.

If you want to be really fit and healthy, start by never again eating anything made with wheat flour, you know it makes sense.
