Food on Friday ~ One Pot Meals

Cooking can be fun, washing up almost always isn’t.

In my view, one pot meals are the way to go, particularly if you’re busy with work and everything.  There’s nothing worse than taking your plate to the sink after dinner, and then realising you also have a mountain of dirty pots and pans to wash up in the aftermath.  I don’t know anyone who gets their kicks from tackling a mountain of washing up.

So, why not give some of these great one pot recipes a try.

This is a nice looking recipe for a dish I really like.  From No Plate Like Home we have one pot thick New England clam chowder.  This is also known as Boston Clam Chowder and it’s a perfect winter comfort food you can make in one pot in under an hour.

Another fabulous one pot soup this time from Dana at Minimalist Baker.  This hearty chipotle black bean tortilla soup needs just 50 minutes and one pot to prepare, and Dana says it’s very ‘hands off’.  This Mexican-inspired soup is also vegan and gluten-free.  How cool is that?

This is a dish I must try, from Jessica Merchant at How Sweet Eats we have this one pot chili cheese pasta.  Looks like a great recipe you can make in one pot in one hour, and while it’s cooking you can prepare some salad to go along with it.  Also what a great dish for taking leftovers to work for a nourishing lunch.

Not only is this a one pot meal from Teighan Gerard at Half Baked Harvest, you should be able to prepare this one pot 30 minute creamy tomato basil pasta bake in less than a half-hour.  There are quite a few ingredients involved, but I think it would be well worth it.

This is a more ambitious one pot meal from Simply Recipes, a Moroccan pot roast, originally posted by Sally Vargas.  This is going to take you some 3 hours to prepare, so it’s probably not an everyday meal ~ unless you use your slow cooker?  But for a one pot weekend dinner for you and your guests it looks fantastic.  The spice mixture should please everyone, (almost everyone).

This is a meal I wanted to feature; slow cooker beef stew with dumplings, just because it reminds me of my misspent youth.  I eventually found a recipe on the Good Housekeeping site ~ which is worth visiting anyway.

For those of us who love recipe collections, we have this from Country Living; 33 quick and easy one-dish meals, and there are some great and some fabulous recipes in this collection.  Among all the dishes I would like to have featured is this cilantro lime chicken and rice, from Tiffany at Creme de la Crumb.

Food on Friday ~ Comfort Food (Soups)

Comfort food is absolutely moving upscale.

Here in England the weather outside my garret is cold, dark, frosty, wet, and very windy.  Like a lot of people around here I’ve just got over the flu, and I still feel cold and shivery.  What I need to eat most is something hot, nourishing, and comforting ~ like a bowl of home-made soup.

These great soup recipes are mostly easy to make, don’t cost so much, but are absolutely upscale meals you could serve to any guest.

Ergo, first up this week, from Jessica Merchant at How Sweet Eats, we have this silky ginger sweet potato soup.  I love the idea of adding fresh ginger to a soup recipe.  This recipe is vegan I think.

Another pretty soup, this time from Petra at Food Eat Love; celeriac and cumin soup with watercress.  This looks as though it would keep us warm in the cold winter nights.  Cumin is an interesting spice with lots of health benefits.

Chungah at Damn Delicious has this great recipe for roasted cauliflower soup, with lots of garlic and herbs.  Looks fabulous to me!

From Amanda at Chez Le Rêve Français we have a recipe for fat-free potato and leek soup ~ and I do love leek and potato soup. This recipe is pretty easy, fat-free, and gluten-free.  Oh so warming on a cold winter’s day.

Dana at Minimalist Baker has a fantastic recipe for a 1-pot everyday lentil soup ~ and I do love one-pot recipes. This recipe uses just 10 ingredients and should only take you 30 minutes to make.  If you don’t like lentils you could use white beans or chickpeas instead.

Here’s a very interesting and filling soup from In Diane’s Kitchen; Cajun shrimp, hot sausage & pasta soup ~ Wow!  This recipe is chock full of noodles, hot Italian sausage, shrimp, and a really great broth.

And last but not least for this week we have a cool recipe from Averie Sunshine at Averie Cooks; easy 30-minute homemade chicken noodle soup.  I like easy recipes you can prepare in 30 minutes or less.

Food on Friday ~ Fall Recipes

Fall, the year’s last and loveliest smile.

Except here in England we call it autumn, and in parts of America it’s more like high summer than fall.  In Orange County, Southern California, the temperature hit 100 degrees this week and the U.S. National Weather Service has an on-going Excessive Heat Warning for that part of the world.

Meanwhile, where I live in the North of England it’s about 55 degrees and distinctly autumnal, dull, grey and wet, so hot comfort food is a good idea for me.

First up this week is Joanne Schweitzer, from No Plate Like Home, who brings us this cheesy ham and turkey noodle casserole.  This is a brilliant dish if you have leftover ham or leftover turkey, or both….  you know what?  This is a brilliant dish whichever way you look at it.

If you are vegetarian, or perhaps vegan, then you will love the whole food recipes from Cookie + kate, (Cookie is the dog).  This week we have a hearty vegetable paella, which you should be able to make in an hour, but as most of that time is just leaving the dish alone in the oven, you can get on with other things while your paella is cooking.  (I’m pretty certain this is a vegan recipe.)

Kitchen Gadget lover Diane, from Dianes Kitchen, has what I think is a fairly quick and delicious recipe for a chicken gnocchi soup, and if you think this doesn’t look like it’s a warming dish for a blustery fall evening, then there’s no pleasing some people… hahahahaha

This is another great looking recipe for a really warming and hearty soup.  From Elise Bauer at Simply Recipes we have this one-pot chicken and rice soup.  (It should really be chicken, rice, and lots of vegetables.) I love one-pot dishes, and you should be able to make this fall recipe within the hour.

One big thing about the fall, (autumn), is that it’s time to dig out your slow cooker / crockpot from the back of whatever cupboard it’s been in all summer long.  Tieghan, at Half Baked Harvest, has a brilliant vegetarian / vegan slow cooker dish; slow cooker potato and cauliflower curry.  This is perhaps a 5 hour cooking time dish, so you may want to have your slow cooker on while you are at work, (get a timer).

In the autumn and winter I like roasted vegetables, (with whatever entree, or just with chopped bacon).  I have included this recipe from Dana at Minimalist Baker, just because I was so damn intrigued.  Dana says that these oil-free roasted vegetables totally work. I haven’t tried this recipe as yet, but I certainly will this weekend.  Obviously this is another vegan dish.

Food on Friday ~ Eggs

Eggs ~ so what can you do with the humble egg?

Eggs are incredibly nutritious ~ a real superfood, filled with all the good stuff you need for a healthy immune system.  And, eggs are cheap, easy to cook, and don’t have to be boring ~ as this week’s recipes will show.

For anyone pressed for time, or someone who wants a hot lunch at work, Elise Bauer at Simply Recipes has this omelette in a mug.  It’s cooked in the microwave.  I’ve tried to cook eggs in the microwave before, and had an egg explosion most times.  Elise says the secret is to add liquid to the eggs ~ and use a large enough mug.  I’ve tried her method, and it works brilliantly, (I buttered the bottom of my mug first).  Good Food doesn’t get easier than this.

Simple Baked Eggs are almost as easy as the omelette in a mug, except you need an oven and not a microwave.  Even Cosmopolitan Magazine has a collection of 12 baked eggs recipes worth getting out of bed for.  But anyone, even the most ineptly boring guy can make a good, delicious, healthy hot meal in 10 minutes by baking eggs.  There are a stack of recipes for baked eggs, but this one is from Cooking Without Limits.

Right, listen up, this is another dead easy dish for you very busy folk and healthy eaters.  Jessica Merchant at How Sweet It Is has this great recipe for a 15 minute spinach burrata omelette with avocado salad.  Look, anybody can make a great meal in 20 minutes with this recipe, even really inept boring guys.

Dana from Portland, Oregon, (aka Minimalist Baker) has an easy recipe for a simple vegan omelette, and OK I don’t even pretend to understand the various types on non-carnivores, but I like the look of this easy dish.  The secret is this omelette uses tofu, and not eggs.  I guess you can make exactly the same recipe with eggs, and I guess you can make a lot of egg-based dishes with tofu.  hmmmmm.

Tiegan Gerard at Half Baked Harvest always has some interesting and good-looking recipes ~ this grilled pineapple caprese eggs Benedict with coconut-almond hollandaise certainly caught my eye and whetted my appetite.  Look, the only even remotely hard part of this dish is the Hollandaise, and the’s dead easy in the food processor.  Try it, you’ll like it.  Also from Tieghan in Food on Friday #43 we have a grilled potato salad with almond-basil chimichurri and 7 minute eggs.

This is a totally fantastic recipe from Erica at Honestly Yum; Turkish Eggs, also called Çilbir.  I’ve eaten this tasty little dish all over the Mediterranean, just don’t call it Turkish Eggs in Greece.  I think my friend in Orange County will like this because of the yogurt, cilantro, garlic, and pepper in there along with the eggs.
